It is a matter of preference, especially how the instrument feels in your hands. Varnish is smooth and resistant to dirt. Oil, wax and similar finishes retain the natural feel of wood and can absorb perspiration, but they can also become marked or greasy. Finish affects the sound only subtly and is not a useful factor to judge in isolation from the rest of the instrument.
